As a father of two young boys, mornings in our house are a whirlwind of excitement.
Between getting them dressed, packing lunches, and finding the missing shoes, there’s always something to juggle.
But, if there’s one thing I always make sure to do, it’s start the day with a hearty breakfast.
Not just for me, but for my little guys too.
It’s our time to sit together, eat something delicious, and get energized for the day ahead.
One of our family favourites?
A high protein bananas French toast that’s not only easy to make but also healthy and filling.
This recipe is a total game-changer.
I’m all about making things that are simple but still packed with the good stuff—especially when it comes to making sure my boys get the nutrition they need before heading off to school or daycare.
The best part?
It’s one of those meals that doesn’t require a ton of time or fancy ingredients.
I have also been on a health journey recently so making sure that I hit my protein goal is extremely important.
That is why I made these high in protein so I don’t have to feel bad about the extra syrup.
Here’s how we make it together:
Ingredients:
- 4 slices of whole grain bread (I prefer the thick slices; they hold up better!)
- 2 ripe bananas (the riper, the sweeter)
- 1 cup egg whites (this adds that protein boost we need)
- 1 scoop vanilla protein powder (the boys love the vanilla flavour—it makes the whole dish taste like a treat!)
- 1/2 tsp vanilla extract (because who doesn’t love that hint of vanilla?)
- 1/4 tsp cinnamon (adds a cozy warmth to the flavour)
- 1 tbsp coconut oil for cooking (I love the slight hint of coconut flavour this gives)
Instructions:
- Start with the bananas: I let my boys help here. They love mashing up the bananas, and it’s a good way for them to get involved in the kitchen. Mash one ripe banana until it’s nice and smooth in a bowl.
- Mix it up: Add the egg whites, protein powder, vanilla extract, and cinnamon to the mashed banana. I give them the whisk and let them take turns mixing it all together. It’s messy, but it’s fun.
- Get the pan ready: Heat a non-stick pan or griddle over medium heat and toss in a little coconut oil. The smell of the coconut oil heating up always gets the boys excited.
- Coat the bread: Dip each slice of bread into the banana-egg mixture, making sure both sides are fully coated. I usually give the slices a quick flip in the bowl to make sure they get nice and saturated. The bread soaks up all the good stuff.
- Cook the French toast: I cook each slice for about 2-3 minutes on each side until they’re golden brown. The kitchen fills with the comforting smell of cinnamon and vanilla, and the boys start circling the kitchen, eager to dive in.
- Top it off: While the French toast is cooking, I slice up the second banana. Once the French toast is ready, I serve it hot, topped with those caramelized banana slices for that extra natural sweetness.
