Slow Cooker Beef Stew recipe:
Ingredients:
- 2 lbs beef chuck, cut into 1-inch cubes
- 1/4 cup all-purpose flour
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
- 1 large onion, chopped
- 3 garlic cloves, minced
- 4 medium carrots, cut into 1-inch pieces
- 3 medium potatoes, peeled and cubed
- 2 celery stalks, chopped
- 1 cup beef broth
- 1 can (14.5 oz) diced tomatoes
- 1 tbsp Worcestershire sauce
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 2 bay leaves
Instructions:
- In a large zip-top bag, combine flour, salt, and pepper. Add beef cubes and shake to coat.
- Heat olive oil in a large skillet over medium-high heat. Brown the beef cubes on all sides, working in batches if necessary. Transfer browned beef to the slow cooker.
- In the same skillet, sauté onions and garlic until softened, about 3 minutes. Add to the slow cooker.
- Add carrots, potatoes, and celery to the slow cooker.
- Pour in beef broth, diced tomatoes, and Worcestershire sauce. Add thyme, rosemary, and bay leaves.
- Stir gently to combine all ingredients.
- Cover and cook on low for 8-10 hours, or on high for 4-6 hours, until the beef is tender and vegetables are cooked through.
- Taste and adjust seasoning if needed.
- Remove bay leaves before serving.
- Serve hot, optionally with crusty bread on the side.
