Today we’re making a Creamy Parmesan Italian Sausage Soup.
Creamy Parmesan Italian Sausage Soup:
Ingredients:
- 1 pound Italian sausage, casings removed
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cups baby spinach
- Salt and pepper to taste
- Optional: 1 cup uncooked small pasta (like orzo or small shells)
Instructions:
- In a large Dutch oven or pot, cook the Italian sausage over medium heat, breaking it up with a wooden spoon as it cooks. Cook for about 5-7 minutes until browned.
- Add the diced onion, minced garlic, and Italian seasoning to the pot. Cook for an additional 2-3 minutes until the onion is translucent.
- Pour in the chicken broth and diced tomatoes. Bring the mixture to a boil, then reduce heat and simmer for 10 minutes.
- If using pasta, add it now and cook according to package instructions.
- Stir in the heavy cream and grated Parmesan cheese. Simmer for an additional 5 minutes, stirring occasionally, until the cheese is melted and the soup is creamy.
- Add the baby spinach and cook until wilted, about 2 minutes.
- Season with salt and pepper to taste.
- Serve hot, garnished with additional grated Parmesan cheese if desired.
