Instructions
 

  • Preheat oven to 425°F (220°C).

  • Place chicken thighs on one side of a large sheet pan. Brush with about 1/3 of the olive oil mixture.
  • In a large bowl, toss sweet potato, Brussels sprouts, bell peppers, onion, carrots, and zucchini with the remaining olive oil mixture.
  • Spread the vegetables on the sheet pan next to the chicken in a single layer.
  • Roast in the preheated oven for 25 minutes.
  • Remove the pan, add cherry tomatoes, and gently toss the vegetables.
  • Return to the oven and roast for an additional 15-20 minutes until chicken reaches an internal temperature of 165°F (74°C) and vegetables are tender.
  • Rest for 5 minutes.
  • Squeeze lemon wedges over the chicken and vegetables before serving.
