Ingredients
  

For the Chicken Bites:

  • 1.5 lbs boneless skinless chicken breast, cut into 1-inch cubes
  • 4 tbsp butter
  • 6 cloves garlic minced

  • 2 tbsp fresh parsley chopped

  • 12 oz pasta penne or fettuccine
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups milk
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions
 

  • Cook pasta according to package instructions. Drain and set aside.
  • In a large skillet, melt 4 tbsp butter over medium heat. Add minced garlic and cook for 1 minute until fragrant.
  • Add chicken cubes, season with salt, pepper, and Italian herbs. Cook for 8-10 minutes, stirring occasionally, until golden brown and cooked through. Remove chicken from skillet and set aside, keeping it warm.
  • In the same skillet, melt 2 tbsp butter over medium heat. Add flour and whisk for 1 minute.
  • Gradually pour in milk, whisking continuously to prevent lumps. Cook for 3-4 minutes until thickened.
  • Reduce heat to low, stir in Parmesan until melted, and season with salt, pepper, and nutmeg if using.
  • Add cooked pasta to the sauce, tossing to coat evenly.
  • Return chicken bites to the skillet and gently mix with the pasta.
  • Sprinkle with fresh parsley and additional Parmesan if desired. Serve immediately.
