High Protein Bananas French Toast

Ingredients
  

  • 4 slices thick whole grain bread
  • 2 ripe bananas divided
  • 1 cup egg whites
  • 1 scoop vanilla protein powder
  • 1/2 tsp vanilla extract
  • 1/4 tsp cinnamon
  • 1 tbsp coconut oil

Instructions
 

  • Mash one banana in a bowl until smooth. Add egg whites, protein powder, vanilla extract, and cinnamon, whisking to combine.
  • Heat a pan over medium heat and add coconut oil.
  • Dip each slice of bread in the banana mixture, coating both sides.
  • Cook slices for 2-3 minutes per side until golden brown.
  • Slice the second banana for topping. Serve French toast hot with banana slices on top.
