There’s something magical about biting into a perfectly seared piece of steak that’s been kissed by Cajun spices and bathed in garlic butter.
These Cajun Butter Steak Bites are what happens when comfort food meets Louisiana flair – tender, juicy pieces of steak with a perfectly caramelized crust that’s loaded with bold, spicy flavours and finished in a luxurious butter sauce.
I love anything spicy and I wanted to try to switch up from my regular garlic butter.
I don’t usually go for cajun as my preferred seasoning of choice. When I am going for a spicier option I tend to use cayenne.
Sometimes it’s nice to make the switch though and this was definitely one of those times.
What You’ll Need
For the Steak:
- 2 pounds sirloin steak (or ribeye), cut into 1-inch cubes
- 2 tablespoons olive oil
- 3 tablespoons butter, divided
- 4 cloves garlic, minced
- Fresh parsley for garnish
For the Cajun Seasoning:
- 1 tablespoon paprika
- 1 teaspoon cayenne pepper (adjust to taste)
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon black pepper
- 1 teaspoon kosher salt
For the Butter Sauce:
- 4 tablespoons butter
- 4 cloves garlic, minced
- 1 tablespoon Worcestershire sauce
- 1 tablespoon fresh lemon juice
- ¼ cup fresh parsley, chopped
Instructions
- Prep the Steak:
- Pat the steak cubes dry with paper towels (this is crucial for getting that perfect sear!)
- Mix all the Cajun seasoning ingredients in a bowl
- Generously season the steak bites with the Cajun mixture, making sure each piece is well-coated
- Get That Perfect Sear:
- Heat a large cast-iron skillet over high heat until it’s smoking hot
- Add olive oil and 1 tablespoon butter
- Working in batches (don’t crowd the pan!), add the steak bites
- Sear for 2-3 minutes per side for medium-rare, getting a nice crust on each piece
- Transfer seared pieces to a plate and repeat with the remaining steak
- Make the Butter Sauce:
- In the same skillet, lower heat to medium
- Add remaining butter and minced garlic
- Once garlic is fragrant (about 30 seconds), add Worcestershire sauce and lemon juice
- Let it simmer for 1-2 minutes until slightly thickened
- Bring It All Together:
- Return the steak bites to the skillet
- Toss to coat in the butter sauce
- Sprinkle with fresh parsley
