These Lemon Garlic Chicken Skewers are one of our go-to BBQ recipes in the summer.

They’re juicy, super flavourful, and get just the right amount of char from the grill.
The chicken is marinated in lemon, garlic, and herbs, so every bite is bright, savoury, and perfect for warm nights on the patio.

You can prep everything earlier in the day, let the chicken soak up all that marinade, and just toss them on the grill when you’re ready.
Serve them with grilled veggies, a simple salad, or even tucked into warm pita with a little tzatziki.
What You’ll Need:
- 2 lbs boneless, skinless chicken thighs or breasts, cut into 1½-inch pieces
- Wooden or metal skewers (if using wood, soak them for 30 minutes before grilling)
For the Marinade:
- ¼ cup olive oil
- Juice + zest of 1 lemon
- 4 garlic cloves, minced
- 1 tsp dried oregano
- ½ tsp paprika
- 1 tsp salt
- ½ tsp black pepper
- 1 tbsp plain Greek yogurt (helps tenderize)

How to Make It:
1. Make the marinade.
Whisk together olive oil, lemon juice and zest, garlic, oregano, paprika, salt, and pepper. Stir in yogurt.

2. Marinate the chicken.
Add chicken pieces to a large bowl or zip-top bag. Pour marinade over and toss to coat. Cover and marinate in the fridge for at least 1 hour—longer is even better.
3. Prep your grill.
Heat your BBQ to medium-high and lightly oil the grates.
4. Skewer the chicken.
Thread the marinated chicken onto skewers. Leave a little space between pieces so they cook evenly.

5. Grill.
Place skewers on the grill and cook for 12–15 minutes, turning occasionally, until the chicken is fully cooked and has nice charred edges.
6. Serve.
Let rest a few minutes, then serve warm with your favourite sides!
Recipe Tips:
- Use chicken thighs for extra juicy skewers, but breasts work great too.
- Don’t skip the lemon zest—it really adds fresh flavour.
- These pair perfectly with rice, grilled veggies, or a chopped cucumber salad.
- Make extra—they’re great the next day in wraps or bowls!
