Every year when the holiday season rolls around, I find myself craving one particular treat: Peppermint Bark.
There’s something magical about the combination of rich chocolate and cool peppermint that just screams “Christmas” to me.
Today, I’m excited to share my favourite recipe with you!
My grandma absolutely loved eating bark at Christmas time, normally it would be almond bark but she also loves this one!
This recipe has become a family favourite, especially with my nephews.
They always get excited when they see me bringing out the ingredients, knowing that a delicious treat is on the way.
Their enthusiasm makes the whole process even more enjoyable for me.
The Recipe
Here’s what you’ll need:
- 16 oz dark chocolate, chopped
- 16 oz white chocolate, chopped
- 1/2 tsp peppermint extract
- 3/4 cup crushed candy canes
And here’s how I make it:
- First, I line a baking sheet with parchment paper. Trust me, this makes cleanup so much easier!
- Then, I melt the dark chocolate. I prefer using a double boiler for this, but if you’re short on time, the microwave works too. Just be sure to stir frequently to avoid burning.
- Once it’s smooth, I pour the dark chocolate onto the baking sheet and spread it out evenly. This goes into the fridge for about 15 minutes to set.
- While I’m waiting, I melt the white chocolate using the same method. Once it’s melted, I stir in the peppermint extract. The smell at this point is absolutely heavenly!
- When the dark chocolate is set, I pour the white chocolate mixture over it and spread it out.
- Here comes the fun part – sprinkling crushed candy canes all over the top! I love the festive pop of colour this adds, and my nephews always volunteer to help with this step.
- Finally, the whole thing goes back into the fridge for 1-2 hours until it’s completely firm.
- Once it’s set, I break it into pieces, and voila! Peppermint bark is ready to be devoured.
What I love about this recipe is its simplicity.
It’s perfect for those days when I want to make something festive but don’t have the energy for an elaborate baking project.
Plus, it makes a great gift!
I often package it up in cute tins for friends and family.
My nephews particularly enjoy helping me make this treat.
They love crushing the candy canes (safely, of course) and sprinkling them over the chocolate.
It’s become a bit of a holiday tradition for us, and their excitement is contagious.
