Spicy Pork Sausage Stuffing

Ingredients
  

  • 2 pounds pork sausage
  • 1 medium onion finely chopped
  • 1-2 green onions thinly sliced
  • 4-6 cups breadcrumbs depends on the texture you like
  • 1 cup chicken broth or water if needed
  • 1 tablespoon garlic powder
  • 1 tablespoon sage
  • 1 tablespoon poultry seasoning
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2-3 tablespoons homemade pepper sauce adjust to taste

For the homemade pepper sauce:

  • 5-6 hot peppers like habanero or scotch bonnet, chopped
  • 1/4 cup vinegar
  • 1 clove garlic
  • Salt to taste

Instructions
 

  • To prepare the pepper sauce, blend the chopped hot peppers, vinegar, garlic, and salt together until smooth. Set aside.
  • Cook the pork sausage in a large skillet or Dutch oven over medium heat, breaking it apart with a wooden spoon. Continue until the meat is browned and no longer pink, then drain any excess grease.
  • Add the finely chopped onion, green onion, garlic powder, sage, poultry seasoning, thyme, salt, and pepper to the sausage. Stir well and cook for about 5 minutes until the onions are softened.
  • Gradually stir in the breadcrumbs, mixing thoroughly. If the stuffing mixture feels too dry, add chicken broth a little at a time, letting the breadcrumbs absorb the liquid as you go.
  • Incorporate 2-3 tablespoons of the homemade pepper sauce (or adjust to your preferred level of spice) and mix well to evenly distribute the heat.
  • Reduce the heat to low and cook for 10-15 minutes, stirring occasionally, until the stuffing is heated through and reaches your desired consistency.
  • Taste the mixture and adjust the seasoning with additional salt or pepper sauce if needed.
  • Remove from heat and let the stuffing rest for a few minutes before serving.
