Recipe
Ingredients:
- 2 pounds pork sausage
- 1 medium onion, finely chopped
- 1-2 green onions, thinly sliced
- 4-6 cups breadcrumbs (depends on the texture you like)
- 1 cup chicken broth or water (if needed)
- 1 tablespoon garlic powder
- 1 tablespoon sage
- 1 tablespoon poultry seasoning
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2-3 tablespoons homemade pepper sauce (adjust to taste)
For the homemade pepper sauce:
- 5-6 hot peppers (like habanero or scotch bonnet), chopped
- 1/4 cup vinegar
- 1 clove garlic
- Salt to taste
Instructions:
- First, make the pepper sauce: Blend the hot peppers, vinegar, garlic, and salt until smooth. Set aside.
- In a large, deep skillet or Dutch oven, cook the pork sausage over medium heat, breaking it up with a wooden spoon, until it’s no longer pink and slightly browned. Drain grease.
- Add the chopped onion, green onion, and seasonings to the skillet. Cook for about 5 minutes until the vegetables are softened.
- Stir in the breadcrumbs.
- If the mixture is too dry, gradually add the chicken broth, stirring constantly to ensure the breadcrumbs absorb the liquid evenly.
- Add 2-3 tablespoons of your homemade pepper sauce (or to taste), stirring well to distribute the heat evenly.
- Cook over low heat for about 10-15 minutes, stirring occasionally, until the stuffing is heated through and has reached your desired consistency.
- Taste and adjust seasoning with salt and additional pepper sauce if needed.
- Remove from heat and let it stand for a few minutes before serving.
