Ingredients
  

  • 1 package of tortellini cheese filling
  • 3 cups of chicken stock
  • 1 can of diced tomatoes 14.5 oz
  • 8 oz tomato sauce
  • 1 tablespoon of oil
  • 1 tablespoon of butter
  • 1/4 cup of all-purpose flour
  • 1 large onion diced
  • 4 cloves of garlic minced
  • 1 teaspoon of dried basil
  • 1 teaspoon of dried rosemary
  • 1 teaspoon of dried Italian seasoning
  • 1/2 cup of grated Parmesan
  • 1 1/2 cup of fresh spinach
  • 1/2 cup of heavy cream 35%
  • Salt and pepper to taste

Instructions
 

  • Heat up large pan, then add oil and butter. Let it warm up then add onion and let’s sweat for 3 to 5 minutes or until translucent.
  • Add garlic and flour and Let cook for an additional minute.
  • Add stock, tomato sauce, chopped tomato, and all the seasonings and the salt and pepper to taste. Taste and make sure it’s to your liking.
  • Keep on medium to high heat bring to boil, then add tortellini cook for a few minutes until the tortellini is fully cooked inside.
  • Reduce heat, add cream Parmesan cheese, and spinach. Stir in. Take off of heat and let cool for a few minutes then serve. Enjoy!!
