You know those meals that come together so fast, you barely feel like you cooked?

That’s exactly what happened with these chicken fajitas.
I threw them together in about 20 minutes with what I had on hand, and honestly, they were so good I had to share.
I usually make fajitas with corn tortillas (love that little extra texture), but this time I used regular flour tortillas and they worked just as well.

The only prep was slicing up some red and yellow bell peppers.
I used chicken fillets, so I didn’t even have to cut the meat, just straight into the pan.
That made things extra quick.
I seasoned everything with a mix of taco seasoning, garlic plus (I swear this stuff makes everything better), salt, pepper, and a pinch of cayenne for some kick.
Simple, flavorful, and so so quick.
These are the kind of meals that make weeknights feel a little more put together without a lot of effort.
You can top them however you like, sour cream, salsa, cheese, whatever you’ve got.

Steps:
Start by preheating your oven to 375°F.
If you are cooking a full chicken breast or thigh, you could turn it up to 400 or cook the chicken longer to make sure it is cooked through.
The next step is to prep your ingredients.

Place the chicken fillets and sliced bell peppers on a sheet pan.

I had to use two different ones, but if you are cooking less food then you can probably fit it on one sheet pan.
Drizzle with any oil, then sprinkle on taco seasoning, garlic plus, salt, pepper, and cayenne.
Toss everything together right on the pan to coat evenly.
Spread everything out in a single layer.
Bake for about 20 minutes, or until the chicken is cooked through and the peppers are tender and a little charred.

Slice chicken (if needed): If your fillets are whole, let them rest for a minute, then slice into strips.
While everything’s baking, warm your tortillas in a dry skillet or microwave.

Load up your tortillas with the chicken, peppers and cheese, and add any of your favourite toppings.
This is such an easy and quick weeknight dinner that will make it so easy to have a home-cooked meal!

- Warm your tortillas: While everything’s baking, warm your tortillas in a dry skillet or microwave.
- Assemble & serve: Load up your tortillas with the chicken and peppers, and add your favourite toppings.
