These Ultimate Carne Asada Nachos are everything you want in a shareable, satisfying snack or let’s be honest, a full-on dinner.

They’re cheesy, meaty, a little spicy, and packed with fresh toppings like guacamole, pico de gallo, and crumbled queso fresca.
The best part? I layer them twice, so every bite is just as loaded as the last.
The worst part about nachos is pulling out a plain chip.
So that’s why I make sure every bite has meat, cheese, and pico de Gallo.

I made these for a murder mystery dinner party that we were hosting, and we couldn’t stop picking at them straight from the pan.
The carne asada adds so much smoky, savoury flavour, and the combination of warm melted cheese with cool guac and fresh pico hits all the right notes.
It’s one of those meals where no one’s talking, just eating and nodding with full mouths.
It is such a great option for any small gathering, especially during these warm summer months!
What You’ll Need:
- Tortilla chips (thick, sturdy ones work best)
- Cooked carne asada, chopped into bite-sized pieces
- Refried beans
- Shredded cheese (cheddar, Monterey jack, or a blend)
- Queso fresca, crumbled
- Pico de gallo
- Guacamole
- Sour cream or Mexican crema (optional)
- Fresh cilantro or jalapeños for garnish (optional)

How to Make It:
Preheat your oven to 400°F and line a sheet pan with parchment.
Spread a layer of tortilla chips on the pan, then top with half the carne asada, refried beans, shredded cheese, and crumbled queso fresca.

Add another full layer of chips right on top, then repeat with the rest of the carne asada, cheese, and queso fresca.

Bake for 10–12 minutes or until the cheese is melted and bubbly.
Remove from the oven and top with fresh pico de gallo, spoonfuls of guacamole, and any other toppings you love like sour cream, cilantro, or sliced jalapeños.

Serve warm—preferably right off the sheet pan with a cold drink nearby.

Tips for Perfect Nachos:

- Use freshly grated cheese for the best melt.
- Add the cold toppings after baking so they stay fresh and vibrant.
