As a working dad of two energetic kids, I’m always on the lookout for quick, delicious dinners. One hectic Wednesday, I found myself staring into the fridge, wondering what to make with the chicken breasts and package of bacon that were about to expire.
Inspiration struck as I remembered how my kids always fought over the bacon at breakfast. Why not combine their favourite protein with chicken for a guaranteed hit?
I wrapped each chicken breast in bacon, sprinkled on some herbs from our small kitchen garden, and popped them in the oven. While they cooked, I played with my kids and started a load of laundry.
The result? A juicy, flavorful meal that had my family asking for seconds. Best of all, it required minimal prep and clean-up – a win for this busy parent!
Now, Bacon Wrapped Chicken is a staple in our meal rotation. It’s proof that sometimes the best recipes come from necessity and a little creative thinking.
Bacon Wrapped Chicken Recipe
Prep time: 10 mins plus 2 hours for chicken to chill in the fridge
Cook time: 15 mins
Serves: 4 people
Ingredients:
4 Large Chicken Breast
8 Slices of Bacon (I prefer less salt but any kind will work)
Salt
Pepper
Onion powder
Garlic powder
Steps:
1. Slice chicken in half lengthways slather both sides and put in the fridge for two hours or overnight, this brings out the moisture out of the chicken and leaves it more flavourful.
2. Pretty heat oven to 400C or my preferred way of cooking on the bbq turn it on instead
3. Take chicken out of the fridge and wrap all four pieces of chicken with bacon (basically make the chicken into a ball with the bacon holding it together)
4. Season both sides of the chicken with pepper, onion and garlic powder.
5. Cook-off on whichever way you decide until both sides are crispy and the chicken is 165 degrees and fully cooked inside and enjoy.
