Potato Scones Recipes

Ingredients:
3 medium potatoes, peeled cut up to boil
1 tablespoon of butter
1 cup of flour, more to roll out with
3/4 teaspoon of baking powder
Salt to taste
Steps:
1. Boil potatoes until they are soft and ready to mash.
2. Mash them with butter, baking powder and salt let them cool until it’s cool enough to work with then mix in the flour and create a ball.
3. On a floured surface roll out the dough to a very thin thickness cut into small squares ready to fry.
4. Have two large pans to fry one dry and one with oil, heat pans to medium heat (adjust heat to avoid burning).
5. Heat in a dry pan first for 30 seconds a side then in the oil pan for another 30 seconds or so a side (adjust time so they are cooked not burned)
6. Place on a paper towel to soak up any extra oil add salt serve and enjoy!
