Potato Scones

Ingredients
  

  • 3 medium potatoes peeled and cut into pieces for boiling
  • 1 tablespoon of butter
  • 1 cup of flour plus extra for rolling out
  • 3/4 teaspoon of baking powder
  • Salt to taste

Instructions
 

  • Boil the potatoes until they are soft and ready to mash.
  • Mash the potatoes with butter, baking powder, and salt. Let the mixture cool until it's cool enough to handle, then mix in the flour and form into a ball.
  • On a floured surface, roll out the dough to a very thin thickness. Cut into small squares, ready for frying.
  • Heat two large pans: one dry and one with oil, on medium heat (adjust heat to avoid burning).
  • First, fry the dough squares in the dry pan for about 30 seconds on each side, then transfer them to the oil pan and fry for another 30 seconds on each side or until golden and cooked through (adjust time to prevent burning).
  • Place the scones on a paper towel to soak up any excess oil, sprinkle with salt, and serve! Enjoy!
