Did you know that the type of sugar you use can dramatically change your cookies?

Using more granulated sugar will give your cookies a crispier edge, while brown sugar leads to a softer, more tender bite.

And here’s a personal tip from me: don’t skimp on the vanilla extract.

Step 1: Preheat the Oven

Before you get started on your cookie dough, preheat your oven to 375°F (190°C). This way your oven is ready and at the right temperature by the time you’re done mixing everything. If your oven tends to run hot or cold, it’s worth double-checking with an oven thermometer for the best results.

Step 2: Prepare Your Baking Tray

Grab a baking tray and line it with parchment paper to prevent sticking and make cleanup easier. No parchment paper?

No problem—give your tray a light spritz with non-stick cooking spray instead. You’ll thank yourself later when the cookies slide right off without a fuss.

We like to use stoneware that is already preseasoned!

It never sticks and lasts for years, it is worth the investment.

Step 3: Mix the Dry Ingredients

In a small mixing bowl, combine the dry ingredients: flour, sea salt, baking soda, baking powder, and cinnamon. The cinnamon adds a warm, subtle depth of flavour that makes these cookies extra special. Use a whisk or fork to blend everything evenly, ensuring the baking soda and powder are well distributed. Set this bowl aside for now—we’ll come back to it soon.

Step 4: Cream the Butter and Sugars

In a medium-sized bowl, cream together the margarine (or butter) with the white sugar and golden yellow sugar. Use a hand mixer or stand mixer for the best results, but a wooden spoon and some elbow grease work, too.

The goal is to beat the mixture until it’s light, fluffy, and smooth, which creates that melt-in-your-mouth texture we all love in cookies.

Step 5: Add the Egg and Vanilla

Once your butter-sugar mixture is perfectly creamy, crack in the egg and add a splash of vanilla extract. Stir just until the egg and vanilla are fully incorporated. Be careful not to overmix at this stage, as overworking the batter can make the cookies dense instead of tender.

Step 6: Combine Wet and Dry Ingredients

Now, it’s time to bring it all together. Gradually add the dry ingredients (from Step 3) into the wet mixture, mixing slowly as you go. You want to stop stirring as soon as you no longer see any streaks of flour. Overmixing can toughen the dough, so take it slow and steady here.

Step 7: Fold in the Chocolate Chips

This is the best part—adding the chocolate chips! Using a spatula or wooden spoon, gently fold the chips into the dough until they’re evenly distributed. This step is what takes your cookies from good to absolutely irresistible. Feel free to add a little extra if you’re a chocolate lover!

Step 8: Shape the Dough

To make shaping easier (and less sticky), keep a small bowl of cold water nearby to wet your hands. Scoop out portions of dough, roll them into balls, and place them on your prepared baking tray. Make sure to leave about 2 inches between each ball so the cookies have room to spread as they bake.

Step 9: Bake to Perfection

Place your tray into the preheated oven and bake for 10-12 minutes. Keep a close eye on them toward the end—when the edges are lightly golden, they’re ready. Don’t worry if the centers look slightly underdone; they’ll continue to set as they cool.

Step 10: Cool the Cookies

Once baked, remove the tray from the oven and let the cookies rest for about 5 minutes. This allows them to firm up just enough to move without breaking. Then, transfer the cookies to a wire rack to cool completely.

  • ½ cup salted margarine or butter softened
  • ½ cup white sugar
  • ½ cup golden yellow sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 cup chocolate chips or more, to taste
  • 1 teaspoon sea salt

Instructions
 

  • Preheat the oven to 375°F (190°C). Line a baking tray with parchment paper or spray with non-stick cooking spray.
  • In a small bowl, combine the flour, sea salt, baking soda, baking powder, and cinnamon. Set aside.
  • In a medium bowl, cream together the margarine (or butter) with the white and golden yellow sugars until smooth and fluffy.
  • Add the egg and vanilla extract, mixing until just combined (do not overmix).
  • Gradually add the dry ingredients to the wet ingredients, mixing slowly until no dry flour is visible.
  • Fold in the chocolate chips until evenly distributed.
  • Using a small bowl of cold water to wet your hands, shape the dough into balls and place them on the prepared baking tray, spaced about 2 inches apart.
  • Bake for 10-12 minutes or until the edges are lightly golden.
  • Let the cookies cool on the tray for 5 minutes before transferring them to a wire rack to cool completely.
