Let me introduce you to a recipe that’s about to become a staple in your kitchen: Tomato Tortellini Soup.
This is actually a recipe that my wife Nicole made first from what she saw on TikTok, but I always have to find a way to make it my own!
It is packed with cheesy tortellini, fresh spinach and has a tomato base.
Unfortunately for me, I can never have just one bowl.
Trust me, once you try it, you’ll be making it on repeat!

Step-by-Step Instructions:
You are going to start by heating up a large pan over medium heat, then add the oil and butter.
Once it’s nice and warm, toss in the diced onion and let it sweat for 3 to 5 minutes, or until it’s soft and translucent.
Then add the minced garlic and flour, stirring everything together.
Let it cook for about a minute.
Then, pour in the chicken stock, tomato sauce, and diced tomatoes.
Add in the dried basil, rosemary, Italian seasoning, and a pinch of salt and pepper.
Give it a good stir, then taste and adjust the seasoning to your liking.
Bring the soup to a boil, then add the tortellini.
Let it cook for a few minutes until the tortellini is tender and perfectly cooked through.

Reduce the heat to low, then stir in the heavy cream, grated Parmesan, and fresh spinach.
Let everything melt together into a creamy soup.
Take the soup off the heat and let it cool for a few minutes.
Then, you can serve it like usual, grab some crusty bread for dipping, and enjoy every spoonful.

This Tomato Tortellini Soup is now a weeknight staple in our house.
Our 4-year-old can sometimes be picky, but he absolutely loves this recipe.
If you are trying to increase the amount of protein you are eating, you could also add in some rotisserie chicken or turkey to make it even more filling.
If you want to add even more protein and find a way to make it even creamier, then I always recommend adding cottage cheese to the soup.
You can add it in after as an extra topping or blend it and add it in with the soup base to get rid of the texture if you don’t like the cottage cheese texture.

Tomato Tortellini Soup
Ingredients
- 1 package of tortellini cheese filling
- 3 cups of chicken stock
- 1 can of diced tomatoes 14.5 oz
- 8 oz tomato sauce
- 1 tablespoon of oil
- 1 tablespoon of butter
- 1/4 cup of all-purpose flour
- 1 large onion diced
- 4 cloves of garlic minced
- 1 teaspoon of dried basil
- 1 teaspoon of dried rosemary
- 1 teaspoon of dried Italian seasoning
- 1/2 cup of grated Parmesan
- 1 1/2 cup of fresh spinach
- 1/2 cup of heavy cream 35%
- Salt and pepper to taste
Instructions
- Heat up large pan, then add oil and butter. Let it warm up then add onion and let’s sweat for 3 to 5 minutes or until translucent.
- Add garlic and flour and Let cook for an additional minute.
- Add stock, tomato sauce, chopped tomato, and all the seasonings and the salt and pepper to taste. Taste and make sure it’s to your liking.
- Keep on medium to high heat bring to boil, then add tortellini cook for a few minutes until the tortellini is fully cooked inside.
- Reduce heat, add cream Parmesan cheese, and spinach. Stir in. Take off of heat and let cool for a few minutes then serve. Enjoy!!
