Ingredients
  

For the Marinade
  • 2 large chicken breasts cut into cubes
  • 1 cup Greek yogurt
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 3 tablespoons extra virgin olive oil
  • 5 cloves garlic use less if preferred, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon dried parsley
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • Skewers for grilling

Method
 

  1. In a large bowl, mix together the Greek yogurt, lemon juice, lemon zest, olive oil, garlic, oregano, onion powder, paprika, parsley, salt, and pepper.
  2. Add the chicken cubes, ensuring each piece is well-coated with the marinade. Cover and refrigerate for 2 to 4 hours or overnight.
  3. Remove the chicken from the fridge and thread the pieces onto skewers, leaving space between each piece to ensure even cooking.
  4. Grill the skewers on a BBQ or grill pan over medium heat, turning until the chicken is fully cooked (internal temperature of 165°F or 74°C).
