- In a large bowl, mix together the Greek yogurt, lemon juice, lemon zest, olive oil, garlic, oregano, onion powder, paprika, parsley, salt, and pepper.
- Add the chicken cubes, ensuring each piece is well-coated with the marinade. Cover and refrigerate for 2 to 4 hours or overnight.
- Remove the chicken from the fridge and thread the pieces onto skewers, leaving space between each piece to ensure even cooking.
- Grill the skewers on a BBQ or grill pan over medium heat, turning until the chicken is fully cooked (internal temperature of 165°F or 74°C).
