Growing up, my family would go to our local flea market every other Saturday.

There was a Greek family that would sell skewers of souvlaki and tubs of homemade tzatziki. It was always one of my favourite meals growing up.

My dad would barbeque the skewers and we would always have it with a side of rice or baked potatoes.

Not only was the trip to the flea market a favourite memory but the food was also always amazing.

Remembering how much I loved going to the flea market, I wanted to show my sons one of my favourite meals growing up.

That is why I came up with this recipe that is as similar as I can get to the Greek chicken and tzatziki I grew up on.


What to Do with Leftover Tzatziki Sauce

Tzatziki sauce is a versatile and delicious addition to many dishes, but sometimes we end up with more than we need. Don’t let that extra sauce go to waste! Here are some creative and tasty ways to use up your leftover tzatziki sauce.

1. Dip

One of the simplest ways to use tzatziki is as a healthy dip. Pair it with fresh veggies like carrots, cucumbers, and bell peppers. It’s a quick and easy snack that’s both nutritious and satisfying.

2. Salad Dressing

Transform your tzatziki into a creamy salad dressing. Just thin it out with a bit of milk or water until you reach your desired consistency. Drizzle it over your favourite salad for a refreshing twist.

3. Meat Sauce

4. Sandwich Spread

Greek Chicken, Tzatziki and Greek Salad Recipe

Greek Chicken

Ingredients
  

For the Marinade

  • 2 large chicken breasts cut into cubes
  • 1 cup Greek yogurt
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 3 tablespoons extra virgin olive oil
  • 5 cloves garlic use less if preferred, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon dried parsley
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • Skewers for grilling

Instructions
 

  • In a large bowl, mix together the Greek yogurt, lemon juice, lemon zest, olive oil, garlic, oregano, onion powder, paprika, parsley, salt, and pepper.
  • Add the chicken cubes, ensuring each piece is well-coated with the marinade. Cover and refrigerate for 2 to 4 hours or overnight.
  • Remove the chicken from the fridge and thread the pieces onto skewers, leaving space between each piece to ensure even cooking.
  • Grill the skewers on a BBQ or grill pan over medium heat, turning until the chicken is fully cooked (internal temperature of 165°F or 74°C).

Steps:

1. In a large bowl mix yogurt, lemon juice, lemon zest, oil, garlic, oregano, onion powder, paprika, parsley, salt and pepper
2. Put chicken in and make sure all pieces of coated stick are in the fridge with a cover for 2 to 4 hours (overnight is fine too)
3. Take out and take each piece and place on skewers don’t overcrowd
4. Cook on BBQ until fully cooked

Greek salad

Greek Salad

Ingredients
  

  • 1/2 seedless cucumber diced (with or without skin)
  • 1 large tomato diced
  • 200 g feta cheese cubed
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried parsley
  • 1 teaspoon dried thyme

Instructions
 

  • Combine the cucumber, tomato, and feta cheese in a bowl.
  • Drizzle with olive oil and sprinkle with oregano, parsley, and thyme. Toss gently to combine.

Tzatziki

Tzatziki Sauce

Ingredients
  

  • 1/2 cucumber peeled and grated
  • 1 cup Greek yogurt
  • 1 tablespoon fresh lemon juice preferred
  • 3/4 tablespoon extra virgin olive oil
  • 2 cloves garlic grated
  • 1/2 teaspoon dried dill
  • Salt and pepper to taste

Instructions
 

  • Place the grated cucumber on a paper towel and squeeze out as much excess water as possible to prevent a watery sauce.
  • In a small bowl, combine the cucumber, Greek yogurt, lemon juice, olive oil, garlic, dill, salt, and pepper.
  • Chill in the refrigerator until ready to serve. Enjoy!
